Cubed sweet potatoes ( 2 large )
Brown sugar
butter or olive oil
wild rice or brown rice ( I use the small box of instant brown rice )
chicken stock
fresh kale
fresh garlic
soy sauce
honey

Directions:
Directions:
I replace the water to cook my rice in with the chicken stock. It gives it much more flavor. Set the rice aside after it is done. Next, peel and cube the sweet potatoes. Sautee them in either butter or olive oil until tender. Next, add a tablespoon of brown sugar or honey to bring out their sweetness. You can add a pinch of cayenne pepper to them if you like. Next, I add about 2 cups of finely chopped kale to the sweet potatoes. Stir well, letting the heat wilt the kale. After the kale has wilted, add the sweet potatoes and kale to the cooked rice and mix well. Now, in a small bowl, make the dressing to pour over the finished dish. Pour a 1/4 cup of honey into a glass measuring cup, add 4 tbsp of low sodium soy sauce and 4 cloves minced garlic. Now, I add about a 1/4 cup of hot water and mix until well combined. Pour over rice and toss well.
