10 russet potatoes ( sliced thin ) you can leave the skin on if you want. Wash the potatoes under cold water, and pat dry.
8 cloves of garlic
2 medium sweet onions, sliced thin
6 green onions
4 tbsp. fresh rosemary
1 stick of butter
2 bricks of cream cheese
2 cups half and half
2 cups parmesan cheese
salt
pepper
adobo

Directions:
Directions:
Preheat oven to 350-degrees and spray the bottom of deep baking pan or casserole dish. Place thinly sliced potatoes on the bottom of the baking dish. Sprinkle with salt and pepper. In a large skillet, melt butter and sautee the garlic and sweet onions until tender. Cut the cream cheese into pieces and add to the skillet, stirring constantly until the cheese melts completely. Pour in the half and half and stir until combined. Add salt and pepper to taste. Sprinkle the top of the sauce with adobo and stir. Add the fresh rosemary and the chopped green onions. Stir to mix, and taste. Adjust seasoning if needed. Finally, mix in half of the parmesan cheese and stir. Sprinkle remaining parmesan cheese on top. Bake for one hour and 15 minutes. let sit for 10 minutes before serving.
