1 lb. chicken breast cut into bite-sized pieces
3 carrots, peeled and sliced
3 c. Broccoli florets
1 zucchini cut into bite-sized pieces
2 cloves garlic, minced
2 T. Vegetable oil, divided
1 T. Cornstarch
2 T. Cold water
1/4 c. Chicken broth
3 T. Soy sauce
1 T. Sesame oil
1 T. Honey
1/2 t. Red pepper flakes

Directions:
Directions:
For sauce, whisk cornstarch Andy water. Add broth, soy sauce, sesame oil, honey and red pepper flakes. Whisk until combined.

Heat 1 T. vegetable oil in large skillet or wok. When it’s hot, add chicken and cook until no longer pink. Add salt and pepper to taste. Transfer to a plate. Add the additional 1 T. vegetable oil to skillet. Add carrots and broccoli and cook until tender. Add garlic and stir fry one minute. Add zucchini and stir-fry until softened. Return chicken to the pan. Whisk the sauce again and add to the pan. Stir until thickened. Serve over rice.

I added a few stalks of asparagus. Mushrooms would also be a good addition.
