2 lbs. broccoli crowns or 2 large bags of frozen chopped broccoli
2 large cans of cream of celery soup ( you can also use cream of broccoli or cheddar cheese soup )
1 small chopped shallot
4 eggs
2 cups Cheddar cheese
2 cups mayonnaise
1 cup crushed Townhouse Crackers
Butter ( half a stick melted )

Directions:
I like using fresh broccoli. When using fresh broccoli, you have to parboil it beforehand.
Once it's partially cooked and drained, put it in a large mixing bowl. Beat eggs in a separate bowl and add that, along with the chopped shallot, soup, cheddar cheese, and mayo. Add melted butter to the crushed crackers, stir, and sprinkle over top of casserole. Bake in a preheated 350-degree oven for 45 to 50 minutes.

This makes quite a bit, so the recipe can easily be cut in half. Again, when using frozen veggies in a casserole, always drain well so your dish doesn't get watery.
