Frozen Spinach ( I use a large brick from Deli Master because there's a lot of us )
2 shallots
4 cloves of garlic
adobo
Heavy cream ( small carton)
1 brick of softened cream cheese
parmesan cheese -1/2 cup
mozzarella cheese - small bag
cayenne pepper or crushed red pepper - a pinch

Directions:
Thaw spinach and squeeze all the water out. This is very important, otherwise, it will come out very watery. Peel and finely mince the shallots and garlic. Sautee in olive oil or butter. Add in spinach and mix well. Add softened cream cheese and stir until it melts. Sprinkle adobo and cayenne or crushed red pepper over spinach and mix. Add in heavy cream. I usually use one small carton. Stir in parmesan cheese, and mix. Top with mozzarella cheese. bake in a 350-degree oven for 30 -35 minutes.

This is a very rich dish. You can make it "lighter" by using low-fat cream cheese and low-fat milk and cheese...it will still be delish ;)
