3 cup whole-wheat flour
2 eggs
¼ cup natural peanut butter
½ cup oats
1 cup natural pumpkin puree
1 shredded zucchini
1 peeled, shredded carrot
1 cup chopped baby spinach

Directions:
Directions:
Preheat the oven to 350° F. Cover a baking sheet with parchment paper. Use a mixer to combine the peanut butter, pumpkin puree, and eggs. Beat in the oats and 2 ½ cups of the flour.

Add additional flour if needed to create a rollable dough texture. Mix in the spinach, carrot, and zucchini. Roll out the dough and cut cookies. Bake for 20 minutes until browned.
