For the vegetable sauce:
4-5 tbsp olive oil
2/3 cloves of garlic, crushed
1 small chilli, chopped finely
5-6 spring onions, chopped finely
1 large aubergine, washed, cut lengthways and then sliced
1 large courgette, cut lengthways and sliced
6-7 large porcini mushrooms, sliced
1 bunch of spinach, chopped
1 carton of tomato passata or 1 tin of chopped tomatoes
5-6 basil leaves
a few sprigs of oregano or half a teaspoon of dried oregano
1 tsp chilli powder (if desired)
1 tbsp of tomato paste
Salt and pepper to taste
1 tsp sugar
1/2 packet of Schwartz lasagna mix if you can get it, but if not, add a tsp of vegetable stock
powder
For the cheese (bechamel) sauce:
2 tbsps butter
2 tbsps plain flour
2 cups milk
1/2 cup of cheddar cheese
salt and pepper to taste
Lasagna sheets (plain or spinach)
Mozzarella cheese, grated

Directions:
1. Heat the oil in a large pan and add the garlic, chilli and spring onion and fry for a few minutes
2. Add the sliced aubergine, courgette, mushrooms, spinach to the pan with any other
vegetables you may wish to add and allow to cook for 10 minutes, stirring occasionally
3. Add the tomato passata and paste, salt, pepper, sugar, basil, oregano, and lasagna mix/stock
powder and let the mixture cook for 15-20 minutes or until the vegetables have cooked
through
4. In the meantime, prepare the cheese sauce by melting the butter in a medium pan. Add in the
flour and stir for a few minutes so that the flour “cooks”
5. Add the milk gradually, stirring all the time until there are no lumps and you have a fairly thick,
but pourable mixture. Add a little more milk if it is too thick.
6. Add the cheddar cheese and salt and pepper to taste
7. Now start layering a large baking dish - start with the cheese sauce, then add a layer of the
vegetable sauce, then a layer of the lasagna sheet and continue until everything is used up.
You should have around a total of 8-9 layers. Try to end with a layer of cheese sauce and then
top with the grated mozarella cheese
8. Place the dish in a pre-heated oven (180C) for 25-30 minutes or until golden
9. Serve with a salad and crusty bread.
