2 slices hickory-smoked bacon, minced
1 tsp butter
2 c. onion, minced
2 medium garlic cloves, minced
2 tsp The Cliff House Spice Blend (See Below)
2 TBLS flour
3 cans of clams (6.5 ounces)
2 c. bottled clam juice
3 c. half and half
1/2 tsp white pepper
8 medium potatoes, boiled, peeled and diced

In heavy bottomed soup kettle, sauté bacon, butter, onion, garlic and The Cliff House Spice Blend over low heat. Do not allow to brown. Drain clams and set aside, reserving the juice. Slowly stir in the flour and clam juices in the sauté mixture. Bring to a boil; reduce heat. Add half and half and simmer 20 minutes. Add white pepper, potatoes and clams. Server at once with crackers and warm cornbread.

4 tsp dried parsley
4 tsp marjoram
2 tsp dill
2 tsp thyme
4 tsp basil
1 tsp sage
4 tsp rosemary
2 tsp tarragon
1 TBSP flour

Blend all ingredients together, crushing in a mortar if possible. Store in a resealable plastic bag to refrigerate.

As a Christmas Eve tradition after we were married your dad either made this or She-Crab Soup(the She-Crab Soup was a favorite from Hudson's in Hilton Head Island, SC where we honeymooned). It is delicious and worth the time and effort. However, I don't think anyone of us will forget Christmas 2020 (Yes, the year of the pandemic!) when Amelia graciously made the soup however we left it on the burner and burnt the heck out of it. NO SOUP FOR YOU! It was a year without the chowder but luckily we had the ingredients for homemade pizzas and the festivities continued. xoxo
