2 c flour
1 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1/2 tsp ginger
1/3 c vegetable oil
1/4 c apple sauce
2/3 c brown sugar
2 eggs
1 T fresh lemon juice
1 tso vanilla
1 c Granny Smith, gala, fuji; diced small
1 c fresh cranberries, halved

Topping:
1/2 c powdered sugar
1/2 tsp cinnamon

Directions:

Preheat oven to 350º. Grease a 9 x 5 inch loaf pan with cooking spray.

Mix flour, baking soda, salt, cinnamon and ginger together, until well blended. Reserve 4 TBSP dry mixture in a separate bow and set aside.

In a separate large bowl, whisk applesauce, oil, brown sugar, eggs and vanilla. Slowly incorporate the dry ingredients into the wet, stirring until well blended. Toss diced apples and cranberries in lemon juice and reserved flour mixture. Fold the fruits into the batter until well blended.

Pour batter into the prepared loaf pan and bake for 40-45 minutes or until toothpick comes out clean.

Cool for 10 minutes before removing from pan, cool completely on wire rack.

Mix powdered sugar and cinnamon together; sift over top of loaf.
