Apple Fritters Recipe

Fritters:
1 c all-purpose flour
2 tsp baking powder
1/2 tsp ground cinnamon
1/2 tsp salt
2 apples, Honeycrisp or Granny Smith, finely chopped
2 tsp fresh lemon juice
2 T granulated sugar
2 eggs, room temperature
1 tsp vanilla
1/4 c whole milk
vegetable oil for frying

Glaze:
1 1/4 c powdered sugar
1/4 tsp vanilla
3-5 tsp water

Directions:

Clean, core and dice apples; toss with lemon juice. Set aside.

In a separate bowl combine sugar, eggs, and vanilla; mix well. Add dry ingredients to the wet mix and blend well. Fold in apples.

Heat oil on medium - high heat. Drop dough by large spoonfuls into hot oil; fry 2-3 minutes on each side. Remove from oil and drain on paper towels.

Glaze:
Mix powdered sugar and vanilla together, add water 1 tsp at a time to desired thickness. Drizzle over cool fritters.
