Nutty Rhubarb Muffins Recipe

3/4 c packed brown sugar
1/2 c buttermilk or sour milk
1/3 c vegetable oil
1 egg, beaten
1 tsp vanilla
2 c all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
1 cup rhubarb, chopped

1/4 c brown sugar, packed
1/4 c nuts, chopped
1/2 tsp cinnamon

In a small bowl, combine brown sugar, buttermilk, oil, egg, rhubarb and vanilla; mix well. Set aside.

In a medium bowl, combine flour, baking soda and salt; whisk together. Add egg mixture; stir until just combined.

Spoon batter into greased muffin tins.

Mix together topping ingredients; sprinkle over tops of muffins. Bake for 20 minutes or until toothpick comes out clean.
