1 3/4 c all-purpose flour
6 T sugar, divided
2 1/2 tsp baking powder
1/4 tsp salt
1/4 tsp cinnamon
1/4 tsp nutmeg
3/4 c milk
1 egg, slightly beaten
1/3 c vegetable oil
1 c fresh or frozen blueberries
1 tsp grated lemon peel

Directions:

Preheat oven to 400º.

In a mixing bowl, stir together flour, 4 tablespoons sugar, baking powder, salt, cinnamon and nutmeg. Make a well in the center of the dry ingredients.

In a separate bowl mix together milk, egg and oil, pour into the well of dry ingredients .

Combine blueberries, remaining 2 tablespoons sugar and lemon peel. Stir into batter.

Spoon into muffin pans, filling 2/3 full. Bake 25 minutes or until toothpick comes out clean.
