2 lbs. russet potatoes, peeled
1 medium onion, chopped fine
2 eggs, lightly beaten
2 tablespoons flour
1 teaspoon baking powder
1½ teaspoons salt
¼ teaspoon pepper
vegetable or canola oil for frying

1. Grate potatoes in food processor. Working in batches, wrap grated potatoes in several layers of paper towel and squeeze liquid out of them.
2. Place potatoes and onion in large bowl. Add eggs, flour, baking powder, salt and pepper with a wooden spoon until ingredients are fully incorporated.
3. Heat oil in skillet over medium heat. Scoop about ⅓ cup of potato mixture per latke and place into hot oil. Fry, turning once, until browned and crisp on both sides.
4. Transfer cooked latkes to a baking sheet lined with paper towels, to drain.
5. Serve hot with apple sauce.
