1 1/2 lbs medium mushrooms, (I use Bellas)
1 lb. pork sausage (breakfast sausage like Bob Evans original)
1 cup shredded mozzarella
1/2 cup seasoned bread crumbs
1/2 cup grated parmesan cheese

Directions:
Directions:
1. Remove stems from mushrooms and chop stems finely.

2. Hollow out caps and set aside.

3. Cook sausage until browned and drain, reserving about 2 teaspoons.

4. Cook stems in 2 teaspoons sausage grease until tender (about 10 minutes).

5. Remove from heat and stir in sausage, 1/2 cup mozzarella, parmesan cheese and bread crumbs.

6. Preheat oven to 450º and fill mushrooms with the sausage mixture. Roll caps (I use a brush) in olive oil and sprinkle tops with remaining mozzarella cheese.

7. Bake in oven for 15 minutes.

These are really good and once you get past hollowing out the caps is a breeze. I also put down foil on the pan that I cook on for easier cleaning!
