1 c sugar
3 eggs
2/3 c vegetable oil
1 tsp vanilla
1 1/2 c all-purpose flour
1 c oatmeal, uncooked
1 T baking powder
1/2 tsp salt
2 tsp cinnamon
1 tsp nutmeg
3 c nuts, coarse chop
3 c zucchini, coarsely shredded
1 c walnuts, chopped

Preheat oven to 350º. Grease bottoms of two 8 x 14 inch loaf pans.

In a large bowl, beat together sugar, eggs, oil and vanilla. Add flour, oats, baking powder, salt, and spices. Mix just until dry ingredients are moist. Stir in zucchini and nuts.

Spoon batter into prepared pans. Bake about 50 minutes or until toothpick comes out clean. Cool 10 minutes, then remove from pans.
