1 large head cauliflower cut into florets
3-4 cloves garlic, depending on preference
½ cup tahini
¼ cup lemon juice
1 tablespoon plus ½ teaspoon coconut aminos
1 to 1½ teaspoon of salt (see notes)
1½ teaspoon cumin
⅛ teaspoon ground coriander
½ teaspoon cayenne pepper
3 tablespoon olive oil

Preheat oven to 375º and line a baking sheet with parchment paper. Spread cauliflower florets on baking sheet and drizzle with olive oil and salt and pepper to taste. Roast for 35-40 minutes until tender and let cool. Add all ingredients except the olive oil to the food processor or blender and blend until smooth. Stop and scrape down the sides with a spatula. With the motor running add the olive oil and blend until creamy.

Serve with veggies

The amount of salt you will need to add will depend on how big your cauliflower is. If you choose to use soy sauce instead of aminos, that will also effect the amount of salt needed. Add salt at the end ½ teaspoon at a time to taste.
