1 Deep Dish Pie Shell - I prefer Kroger Brand
2 to 3 Medium/Large Tomatoes, peeled
1 small Onion, chopped
1 medium Green Pepper, chopped
4 to 5 Bacon Strips - fried crispy
1 cup Grated Cheddar Cheese - use block that you grate NOT pre-shredded
½ cup Mayonnaise
3 tbsp Parmesan Cheese - you can adjust this to your taste

Preheat oven to 350 º. Pierce bottom of pie shell with fork and pre-bake briefly (I get mine pretty brown). Peel and slice the tomatoes; drain well on paper towels, season with salt & pepper. Fry the bacon, get it crispy. Saute the chopped onion and pepper; I use some of the bacon grease. Layer tomatoes - pepper & onions - bacon. Combine mayonnaise and grated cheddar cheese and gently spread on top of layers. Sprinkle Parmesan cheese on top and bake for 25 minutes. When serving can garnish with Sour Cream. Serve with a salad for a delicious meal!
