1 1/4 c sugar
1/2 c butter
2 eggs
1 1/2 c ripe mashed bananas, about 3 large bananas
1/2 c buttermilk
1 tsp vanilla
1 tsp baking soda
1 tsp salt
2 1/2 c flour
1 c chopped nuts

Note: If you don't have buttermilk; mix 2 TBSP vinegar or lemon juice with milk and let set for at least 10 minutes, overnight is better.

Heat oven to 350º. Grease loaf pans.

Mix sugar, butter, salt, baking soda and vanilla. Add eggs and blend well.

Add bananas and buttermilk, mix well Add flour, mix well. Add nuts and blend gently

Pour batter into two greased loaf pans about 3/4 full.

Bake:

Mini loaf - 1 hour
Medium loaf - 1 hour plus 5 min
Large loaf - 1 hour plus 10 min

Check with toothpick, done when toothpick comes out clean, don't overbake.

When filling pans push the batter up against the sides of the pan, this will help the bread bake more even.
