12 oz. grated Monterey Jack cheese
12 oz. grated sharp cheddar cheese
2 bunches green onions, chopped
2 (10¾ oz.) cans cream of chicken soup
4 oz. canned chopped green chilies
16 oz. sour cream
1 cup sliced, pitted black olive
3 large whole chicken breasts, cooked, skinned, boned and cut into 1-inch pieces
12 (6-inch) four tortillas

Combine cheeses and divide into 2 equal portions. Divide green onions into 2 equal parts. In large bowl, combine ½ of the cheese, ½ of the green onions, soup, chilies, sour cream and olives. Reserve 1½ cups of this mixture for topping. Add chicken to the remainder for filling and mix well. Place 3 heaping tablespoons of filling on each tortilla and roll. Place, seam-side down, in lightly oiled shallow baking dish. Arrange in a single layer, using 2 pans if necessary. Spread reserved topping mixture over tortillas. Cover with remaining cheese and green onions. (May be refrigerated or frozen at this point. If frozen, defrost completely before baking.) Preheat oven to 350º. Bake uncovered 45 minutes. Let stand a few minutes before serving.
