2 cup long grain white rice
2 Tbsp. minced onion
2 cloves garlic, minced
2 Tbsp. vegetable oil
4 cups hot water.

1. Place the rice in a colander and rinse thoroughly with cold water
2. Heat the oil in a sauce pan over medium heat. Cook the onion in the oil for one minute. Stir in the garlic and cook until the garlic is golden brown. Add the rice and salt and cook and stir until the rice begins to brown. Pour hot water over the rice mixture and stir. Reduce heat to low, cover the saucepan, and allow to simmer until the water has been absorbed, 20 t0 25 minutes.

Husband Ken lived in Brazil and we visited there several times. We have many great friends there so have several Brazilian favorites. This is a bit unique with rice but delicious. Granddaughter Natalie especially like this version of rice.
