6oz-Ramen Noodles
2oz-Spinach
2-Medium Carrots
2-Scallions
2tsp-Ginger
1.5Tbs-Minced Garlic
2Tbs-Chicken Boulion
2 Pork Ramen Seasoning Packs
2Tbs-Soy Sauce
French Fried Onions
Seasame Oil (optional)
Pinch of Chili Flakes (optional)
Sesame Seeds(Optional)

Prep:
Bring large pot of water (salted)
Thinly slice green onion separating whites from greens.
Peal and slice carrots on a diagonal.
Directions: Once water is boiling, add ramen noodles. Cook,stirring 3-4 minutes. Drain, and add a very light drizzle of sesame oil( or other oil of choice)
In same pot, add scallion whites,ginger and garlic. Cook for 30 seconds.
Stir in 4 cups water. Add chicken & Pork boulion and soy sauce and optional chili flakes. Let simmer.
Pat chicken dry with paper towel. Season with salt/pepper.
Heat oil in large pan over medium-heat. Add chicken and cook until browned and cooked through, 3-5 minutes per side. Remove from heat.Slice and set aside.
Add carrots and a pinch of salt to pan. Cook, stirring occasionally, until browned and softened 5-7 minutes. Transfer to plate.
Drizzle oil to same pan,add spinach and wilt. Divide into two ramen bowls.
Add noodles to each bowl. Top each with both, sliced chicken and carrots.
Garnish with green onion,French fried onions and optional sesame oil, sesame seeds.
