3-4 pounds mittel chuck, sliced thin (beef chuck steak with bone)
salt & pepper
garlic powder or fresh garlic, minced
paprika
a large onion, sliced
1 loaf of stale white bread
1 cup of boiling water
3 Tbsps. sugar
½ cup white vinegar

Directions:

Put beef into a roasting pan and season with salt, pepper, garlic and paprika. Scatter onions over. Roast covered at 350ºF for 1½ hours. Meanwhile, break up the loaf of bread into a bowl. Pour about a 1 cup of boiling water over it and add the sugar and vinegar. Let stand until moisture is absorbed. Add to the roasting meat. Mix periodically, correcting for sugar and vinegar, while continuing to roast for another 1½ hours until the meat is tender & falling apart.

This rustic Eastern Europe peasant dish was one of Zaida Leonard's favourites. The bread sauce is an extender for the meat which I assume was expensive for a large family. We used to love this when Buby Nettie made it when we were kids. I haven't made it recently since Max isn't a big fan, but Linda and I still like it.
