Beer Can Chicken Recipe

Ingredients: 1 Large Roaster Chicken (4-5 lbs.), Washed, lumps of fat removed and blotted dry. 8 Tbsp. of your favorite BBQ Chicken Rub 1 12 oz. Can of beer (brand does not matter, we are not drinking it!) 1-2 Tbsp. of oil

Directions:A lot of folks disagree with which method to use, the one here is a simple one.
Rub the outside of the chicken with the oil (I like to use olive oil) and as much of the cavity as you can. Sprinkle rub into the cavity and on the outside of the entire bird. Make sure you get a good coating. Open the beer can and pour out half of it. Make holes in the upper portion of the can (above the remaining liquid). Insert the can into the cavity of the chicken. Spread the legs to for a tripod and place the chicken in a roasting pan.
Oven Method: Preheat oven to 350. Place the pan into the oven and roast for 2 to 2 ½ hours (chicken will be golden brown and fall off the bone tender.
Smoker Method: Preheat smoker to 225. Place the pan on the smoker and smoke until an internal temperature of 165 (measured in the thickest part of the breast)
Remove the can, cover with foil and let rest for 10 minutes, carve the chicken and serve. |
