1 T. baking powder
1/2 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. cinnamon
3 eggs
1/2 cup sugar
Peanut oil
Powdered sugar

Directions:
Directions:
Mix flour, baking powder, salt, nutmeg and cinnamon in a bowl. Beat the eggs in a mixing bowl until blended. Add the sugar and beat until light and fluffy. Add the flour mixture and mix until smooth. If the batter is too thin, add additional flour (1/4 cup at a time) until it reaches the desired consistency. If the batter is too thin, add additional flour (1/4 cup at a time) until it reaches the desired consistency.

Heat peanut oil in deep fryer or deep iron skillet to 375º. Using a 1 oz. scoop of a teaspoon, drop the batter in the the hot oil. Fry for 1 -2 minutes per side or until light golden brown. Drain on paper towels and sprinkle with powdered sugar. Serve warm.
