Sweet Corn and Tomato Salad Recipe

8 medium ears sweet corn
1 large sweet red pepper chopped
2 c. cherry tomatoes, halved
1 small red onion, finely chpopped
1/2 c. coarsely chopped basil

1/2 c.canola oil
1/4 c. rice vinegar
2 Tbsp. lime juice
1 1/4 tsp salt
1/3 to 1 tsp hot pepper sauce
1/2 tsp. garlic powdeer
1/2 tsp. grated lime zest
1/2 tsp. pepper

cook corn until crisp tender (I do mine with husks on in Microwave)
Cool slightly. Cut from cobs and place in bowl
Stir in red pepper, tomatoes and onion.
Whisk dressing in another bowl until blended,
Pour over corn mixture and toss to coat.
Refrig. covered for at least an hour.
