1/2 cup butter, softened
1/4 cup brown sugar
1 egg, separated 1/2 teaspoon vanilla extract
1 cup all-purpose flour
1/4 teaspoon salt
Finely ground pecans, chopped candy, fruit, jelly, or icing.

Directions:
Directions:
Beat butter and brown sugar until blended. Beat in egg yolk and vanilla. In a separate bowl, sift together flour and salt and add to the first mixture. Prepare two bowls, one with a slightly beaten egg white and one with finely ground nuts. Roll dough into 1-inch balls and dip first in the egg white, then the nuts. Place about 1 inch apart on an ungreased baking sheet—Bake at 350° for five minutes.
Remove from the oven and quickly press them down on each cookie, making a depression in the center. Return to oven and bake 10 minutes longer.
Cool in place The candy, candied fruit, jelly, icing, or tinted powdered sugar in the little indention of the cookies.
