18 to 20 lb. turkey or a 20 to 24 lb. turkey
6 c. water
Salt and Pepper

Pre-heat oven to 500ºF. Put turkey in covered roasting pan. Sprinkle with salt and pepper. Put 6 cups water in pan. Cook 18-20 lb. turkey for 1 hour. Cook 20-24 lb. turkey for 1-1/2 hours.

TURN OFF OVEN. Leave turkey in oven overnight for 12 hours. Very moist - no food poisoning.
