2 lbs. Round Steak
6 tbsp. flour
½ tsp. salt
¼ tsp. black pepper
2 tbsp. Crisco
¼ cup chopped onion
¼ cup chopped green pepper
½ cup ketchup
¾ cup boiling hot water
2 lbs. medium potatoes

Cut steak into serving size pieces (4 oz.). Combine flour, salt and pepper. Sprinkle on top and bottom of steaks. Use meat mallet to beat flout mixture into the meat. Heat Crisco in frying pan and heat until grease is hot. Brown steaks on both sides in grease. Place browned steaks into a roasting pan. Sprinkle onions and peppers on top of steaks. Mix hot water and ketchup in separate mixing bowl. Pour mixture over onions, peppers and steaks.

Preheat oven to 350º. Peel potatoes and cut in half. Place potatoes around the steaks.

Place in oven for 2 hours*.

*if you want potatoes evenly browned, turn them after 1 hour.

This was one of Glenda's favorite dishes her mother, Mae Frye, made. This was a frequent Sunday dinner meal and, during hay season, a favorite with the hay hands! Mae always made sure the hay hands were fed well!
