6 thick slices of crusty bread, 1/4 cup olive oil, plus more for brushing, 3 cloves garlic, 1 left whole, 2 thinly sliced, 2 medium shallots, minced, salt and pepper, 6 lbs cleaned mussels, 2 cups dry white wine, 6 tbsp unsalted butter, 1/2 cup chopped parsley

Preheat broiler brush bread with olive oil and transfer to baking sheet. Broil a few inches from heat turning once for 2 minutes until golden, rub whole clove over toasted bread. In large deep pot heat 1/4 of olive oil. Add shallots and slice garlic, season with salt and pepper cook stirring until garlic is soft and slightly browned (about 3 minutes) Add mussels and cook stirring for 1 minute. Add wine, cover and steam mussels until they open (approx 5 minutes) Remove from heat using a slotted spoon. Transfer mussels to a deep bowl, discarding and unopened mussels. Add the butter and parsley to the broth, swirling and shaking the pot until the butter melts. Slowly pour the broth over the mussels - serve with garlic toasts.
