1/2 cup olive oil, 2 garlic cloves minced, 4 cups cooked cannelloni beans, 8 cups chicken stock, 2 large bunches escarole, cooked and chopped, salt and pepper, freshly grated Parmesan cheese

Directions:
Directions:
Heat oil in large saucepan over medium heat. Add garlic and sauté for 2 minutes. Stir in beans, add stock, escarole, salt and pepper. Lower heat and simmer about 5 minutes until hot add in additional stock if your prefer a thinner soup. Serve garnished with grated cheese.
