5 lbs beef chunk flannel-cut short ribs (1/2 inch thick) Buy two days before cooking.
Marinate 1/2 cup of soy sauce, 1/2 cup water, 3 tsps chopped garlic, 1/2 cup dry white wine, 3 tsp grated ginger, 3 tbsp brown sugar, 1 tsp black pepper, 2 tbsp sesame seeds, 2 tsp crushed red pepper flakes, 1 tbsp sesame oil, 1/2 cup chopped scallions, 1 tbs rice vinegar

Remove short ribs and place in a non-reactive pan (plastic, glass or stainless steel) cover with cloth towel or wax paper (not plastic wrap) Put in refrigerator to age for 2 day. Flip Ribs over after first day. Trim excess fat before placing in marinade.
Marinidarae - combine all marinade ingredients in a blender and pulse a few times. Pour 3/4 of marinade over ribs. Set aside 1/4 of marinade for basting. Marinade at least 4 hours or overnight covered in refrigerator and if marinating overnight, add additional cp of water.
To Barbecue: Get barbecue very hot, have rest of meal ready to serve once meat is cooked. Over height heat, char ribs on both sides bricking with marinade sauce after each turn. If fire is correct, 3 turns should be enough, about 10 min total. Cook medium Dones which is best.
Accompaniments: Asian cabbage slaw, stirred Asian noodles or rice or grilled vegetables.
