1/2 stick of butter, 1 large onion chopped, 6 large potatoes peeled and diced, 6 cups chicken stock, 1/4 cup dry white wine (optional) 2 tablespoons chopped chives (optional) salt & pepper, 1 cup of heavy cream

Directions:
Directions:
Melt butter add onion, sauté for 3 minutes on medium heat, add wine and bring too boil, 2 minutes add potatoes and mix, stock, salt & pepper and bring to boil. Lower heat to simmer. Cook until potatoes are tender approximately 30 minutes. Turn off heat and purée potatoes with some broth. Return to pot add some of potatoes soup to a 2 cup measuring bowl, adding half of cream to bowl. Stir and return to pot. Repeat with the other half of cream. Stir until cream and potatoes are blended. Keep warm, add chopped chives just before serving.
