1 Tbsp oil
1 onion, chopped
3 cloves of garlic
1 4oz diced jalapeno
1 4oz
2 tsp cumin
1 tsp dried oregano
1 tsp cayenne pepper
2 14.5oz cans of chicken broth
3 cups chopped cooked chicken breast
3 15oz cans white beans (I use leftover white beans instead of canned beans)
1 cup shredded Monterey jack cheese, optional

Directions:
Directions:
Heat oil in saucepan on medium-low. Add onions and stir. Mix in garlic, jalapeno, green chilis, cumin, oregano and cayenne. Continue to cook and stir the mixture until tender. Mix in chicken broth, chicken and beans. Simmer 15 minutes stirring occasionally.

Note: I prefer to have this as a soup rather than thick like a chili. I also don’t add the cheese.
