• 1 lg. head Cauliflower (cut into small florets)
• 2 tbsp. Butter (melted)
• Sea salt
• Black Pepper
• ⅔ c. Sour Cream
• Ό cup Heavy Cream or half & half
• 2 cloves Garlic (minced)
• 1 ½ c. Cheddar Cheese (shredded, divided)
• 6 tbsp. Bacon bits (cooked, divided)
• Ό to ½ c. Green onions (chopped, divided)

Preheat oven to 450 degrees F (Keto Friendly)

In a large bowl, toss the cauliflower florets with butter. Season with sea salt and black pepper.
Transfer the cauliflower in a lined baking sheet, in a single layer. Roast in oven 15-20 min, until crisp-tender.
Meanwhile, in same bowl, whisk together the sour cream & heavy cream, until smooth. Stir in the minced garlic, half of the cheddar cheese, half of the bacon bits, and half of the green onions. If desired, season sauce with sea salt and black pepper. (Don’t over salt – it will get more salty as the cheese melts later.)

When cauliflower is done roasting, take it out of oven & mix all into the casserole dish. Top with remaining cheese and bacon bits. Bake until cheese melts. Top with remaining green onions.
