½ pound ground pork
½ pound ground lamb
½ pound ground beef
5 ounces frozen spinach (thawed and drained)
½ cup finely chopped water chestnuts
½ cup grated Parmesan cheese
1 whole egg
1½ teaspoon dried basil
1½ teaspoon dried parsley
1 teaspoon garlic powder (optional)
1 teaspoon kosher salt
¼-½ teaspoon hot pepper flakes
½ cup dried bread crumbs (fine)

Preheat oven to 400ºF
In a large mixing bowl combine pork, lamb and beef. Add spinach, egg. cheese spice and ¼ cup bread crumbs. Mix all ingredients well. Use immediately or store for up to 24 hours in fridge.

Place remaining bread crumbs in a bowl. Make meat balls of about 1½ ounce portions. and roll in crumbs.
Place on a cooling rack in a cookie sheet with sides. Bake for 20 minutes until golden and cooked through.

Can use any ratio of types of ground meat. I find all ground beef to be too firm.
I usually use some dried thyme instead of dried basil.
Instead of cooking on a rack you can put the meatballs in greased minitart pans to bake.Can be frozen either uncooked or cooked.
