1 pound zucchini, sliced
1 cup celery, chopped
1 onion, chopped
1/2 pound sausage
1/2 teaspoons of oregano, salt, pepper
1/2 teaspoon basil
2 cloves garlic, minced
1 green pepper, chopped
28 oz. tomatoes

Directions:
Directions:
Brown sausage, remove from skillet. Add garlic, celery, onion, zucchini and green pepper. Saute lightly for 3 minutes. Add sausage, seasonings and tomatoes. Cover and simmer for 30 minutes. If soup becomes thick add chicken stock. Serve with grated cheese and saltines.
