2 pounds trimmed medium beets. 3 tbsp olive oil, divided 2 lb skin on salmon fillets 1 med orange 2 tbsp chopped parsley

Heat oven to 450 degrees was and dry beets, cut very thin. Line a rimmed baking sheet with parchment paper. Toss beets in 2 tbsp of oil salt pepper. Spread evenly on sheet and bake 20 min. Remove pan turn down oven to 325 degrees. Arrange salmon pieces between beets skin side down. Brush oil over fish season with salt/pepper cook 25 min. Squeeze juice from orange over the fish and beets Serve with parsley garnish.
