8-10 large zucchini squash cut in one inch cubes
2 medium onions chopped
1/4 cup granulated chicken bouillon (Knorr available in Mexican supermarket)
1 tablespoon fresh curry powder
Juice from 1/2 of a lemon
1/8 teaspoon cayenne pepper (or to taste)

Directions:
Spray frying pan generously with vegetable spray. Saute onions until they are golden brown. Boil squash until soft in a large pan filled half-way with water. Mix bouillon, lemon and curry powder in one cup of hot water. Blend squash, onions, bouillon, lemon, curry powder mixture in blender or food processor. Add cayenne pepper to taste.
