1. 1 TBS coconut oil
2. 1 yellow onion, chopped
3. 2 red bell peppers, chopped
4. 1 large carrot, cut into this 2" long pieces
5. 2 cloves garlic, minced
6. 1 TBS curry powder
7. 1/2 tsp cayenne pepper
8. Kosher salt
9. 2 (13.5 oz) cans coconut milk (shaken well)
10. 3 cups swanson chicken broth, low sodium
11. 2 cups shredded rotisserie chicken
12. 1/3 cup chopped fresh cilantro, plus more for garnish
13. 1 package ramen noodles or use more if you want to. Reserve seasoning
for another use.
14. Lime wedges for serving

1. In a large pot over medium hear, heat coconut oil
2. Add onion, bell pepper and carrots and cook until tender, 6-8 minutes.
3. Add garlic and stir until fragrant, 1 minute.
4. Add curry powder and cayenne and season with a little salt.
5. Stir until combined.
6. Pour over coconut milk and chicken broth and bring to a simmer.
7. Add shredded chicken, cilantro and ramen noodles and cook until noodles are
al dente.
8. Garnish with cilantro and serve with lime.
