Bunch of beats
1 diced onion
salt
1 Tbsp vinegar
Sour Cream

Directions:

Cut beats off at about 6 inches from beets. Wash well. Steam beats with a little water until tender.

Cut leaves ,,,,,,, in water to the amount of borscht wanted.

Add 1 diced onion, a little salt, and vinegar (1 Tbsp or more to taste.). Bring to boil.

Cut or grate beets and add to leaves & onions. Add a little vinegar. Bring to a boil.

Cool. When just warm, add sour cream and serve.

Can also add a little celery or dill.
