2 large or 4 small to medium unpeeled Zucchini
1 lb. Hamburger
¼ tsp. fennel seed
¼ tsp. oregano
¼ basil
1 8oz. can tomato sauce
8 oz. Grated cheddar or mozzarella cheese
Parmesan Cheese

Cut Zucchini lengthwise and scoop out seeds. Add seeds and pulp to hamburger, brown, and drain. Season with fennel seed, oregano, and basil. Fill zucchini trenches with hamburger mixture. Pour tomato sauce over top. Cover and bake at 350º for 40 minutes or until hot and bubbly. The last 5-10 minutes sprinkle with cheese and bake uncovered until cheese melts. Sprinkle with Parmesan if desired

Cottage cheese may be added to the hamburger mixture if desired.

Canned spaghetti sauce or homemade may be used.

The fennel seeds give this recipe its good taste.

To shorten baking time, parboil whole zucchini for 5-10 minutes and bake casserole for 20-25 minutes.

Cooked zucchini takes the place of noodles and this recipe tastes like lasagna.
