6 medium carrots, peeled and sliced ¼" on the bias
¼ c. dried cranberries
½ tsp. salt
2 T. sugar, divided
¼ c. low sodium chicken broth
½ tsp. grated orange zest
¼ c. juice from an orange
1 T. butter
pepper

Directions:
Directions:
Bring carrots, cranberries, salt, 1 T. sugar, broth, orange zest and juice to a boil in a 12" non-stick skillet over medium-heat, covered. Reduce to medium heat and simmer, stirring occasionally, until carrots are almost tender (5 min.). Uncover, increase heat to high, and simmer rapidly, stirring occasionally, until liquid is reduced to 2 T. (1-2 min.) Add butter and 1 T. sugar to skillet. Toss carrots to coat and cook, stirring frequently, until completely tender (3 min.).Season with Pepper.
