8 ounces cream cheese, at room temperature (4 - 8 oz.)
1/4 cup mayonnaise (or less)
1 teaspoon Worcestershire sauce
1/2 teaspoon Dijon mustard
1/2 teaspoon garlic salt
1/4 teaspoon onion powder
1/4 teaspoon ground cayenne pepper
8 ounces extra-sharp cheddar cheese, freshly grated
1 4-ounce jar diced pimentos, drained
Salt & freshly ground black pepper, to taste

*Optional: finely chopped jalapeņos

Using an electric mixer or fork, mix all ingredients except the cheese and pimentos. Adjust cream cheese and mayonnaise to your liking. Add the cheese, pimentos, and the jalapeņos (if you are using them). Salt and pepper as needed.

*sometimes I pour in a bit of jalapeņo juice
* I start with a bar of cheese and grate it ~ much better than preshredded cheese
