"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

2 Tbl butter, cubed
1 cup sour cream

Directions:
Preheat oven to 400°. Scrub potatoes; pierce several times with a fork. Bake until tender, 45-60 minutes. Remove from oven; reduce oven setting to 350°.

When potatoes are cool enough to handle, cut 1/3 of the top from each potato and discard top. Scoop out pulp into a large bowl leaving 1/4" thick shell. Reserve shells. Mash pulp with butter & sour cream, dry ranch dressing and pepper until smooth and creamy.

Reserve 1/4 cup crumbled bacon for topping. Gently fold remaining bacon, 3/4 cup cheese and half the green onions into potato mixture (do not overmix).

Transfer to a greased 11x7-in. baking dish. Top with the remaining cheese and green onions; sprinkle with reserved bacon. Bake until heated through and cheese is melted, 15-20 minutes.
