3 medium sweet potatoes, peeled and cut into 1/2 inch strips
2 Tbl oil
1 Tbl cornstarch
1/4 tsp each salt & pepper
Directions:
Directions:
Preheat oven to 400º. Place baking pan in oven to get hot.

Coat sweet potatoes with oil. Toss in cornstarch.

Place potatoes on hot pan. bake until crisp and tender, about 15 minutes.
