1 cup (250 ml) Unbleached Flour
1 tsp (5 ml) Fast Acting Yeast
1.25 (310 ml) cup Buttermilk

Part B
1 Cup (250 ml) Oats
1 cup (250 ml) water

3.5 cups (875 ml) Whole Wheat Flour
1.5 tsp (7.5 ml) Salt
1.5 tsp (7.5 ml) Fast Acting Yeast

2 tbsp (30 ml) Butter Melted
3 tbsp (45ml) honey
1 Egg

The night before you want to make the bread you prepare Part A. First you heat the Buttermilk to lukewarm and mix it with the flour and yeast, cover with plastic wrap or a plate. Take part B mix and cover with plastic wrap or a plate.

The next morning take Part D and melt the butter in a pan or microwave, Do Not over heat just melt it. you then add the honey and Egg and mix it together. Take Part C and mix in a bowl, Add all other ingredients and mix. If you have a Kitchen Aid Kneed it for at least 5 minutes if you are doing this by hand you will Kneed it for 10 minutes. The dough will be slightly wet, if it is really sticky then add .25 cup of flour.

Let rise for approx. 1 hour or double in size. Weigh the dough and decide the size of the bread loafs or buns as this recipe will make 2 loafs or 24 buns.

Let your portioned bread now rise again for Approx. 1 hour or double in size. Bake at 350 º for 25 minutes for buns and 40 minutes for the loafs.

This recipe is from the Outlander cook book and I have modified it a little bit. I started putting a tray of water at the bottom of the oven to proof and bake the bread. I made sure the bread was about 6 inches above the water, any lower and the bottom of the bread was soggy and any higher the tops of the bread were toasty.

If you have a proof button on your stove then use it and if not I would heat my oven for about 5 min at any temp then turn it off. Before you put the portioned bread in the oven to proof heat it again for 5 min, once you are happy with the size of your bread you just turn the oven to 350º and once it is to temp set your timer.

You know when your bread is done when you tap on the top of the bread and it sounds hollow. Pay attention to what you do as if it doesn't turn out make adjustments and see what happens, its the way I have cooked my entire life.
