Cake Roll:
3/4 c. flour
1/4 c. baking cocoa
1 tsp. baking powder
1/4 tsp. salt
3 eggs
1 c. sugar
1/3 c. water
1 tsp. vanilla

1 Carton vanilla ice-cream
slightly softened
French Silk Frosting:
1/3 c. butter
1-1/3 c. powdered sugar
2 Tbsp. Hershey's baking cocoa
1/2 tsp. vanilla
1 Tbsp. milk
Dash of Salt

Directions:
Heat oven to 375°F. Line 15x10x1-inch pan with waxed paper; grease with shortening and dust with flour. In medium bowl, mix flour, cocoa, baking powder and salt; set aside. Beat eggs with electric mixer on medium speed for 5 minutes or until very thick and lemon colored. Gradually beat in granulated sugar on low speed. Beat in water, vanilla, and salt. Gradually mix in flour mixture, beating just until batter is smooth, keeping air in batter. Pour batter into prepared cookie pan spreading batter to corners. Bake 12-15 minutes until done. Loosen cake from edges of pan and lift with waxed paper edges onto cooling rack. When cake is cooled place on counter and spread with softened ice-cream. I like to cut ice-cream with a knife and place on cake. Now roll up the cake starting on the short side to make an ice-cream roll, place seam side down on piece of foil and wrap cake. Freeze for several hours.
Frosting: Beat ingredients in medium bowl on low speed until blended. Frost cake roll with frosting, slice and serve. I make 1” slices for 10 pieces per cake. You may drizzle with a little chocolate sauce on top and serve with whipped cream etc. Make two! Don't be surprised if someone cuts a 3 inch chunk for themselves!

This cake has been a favorite for many years, for birthdays. I have made a caterpillar and a Christmas Yule log. We have served it at Scott, Chris & Nik's weddings. It is good with any flavor of ice-cream. It stores well in freezer for a couple of months.
