One whole chicken (preferably organic)
2 carrots, chopped
3 or 4 stalks of celery - leaves are best
2 onions, coarsely chopped
water to cover (or almost)

bring all to a boil, then simmer the crap out of all the ingredients - 2-3 hours. The chicken will fall apart.
Strain all into a big bowl. Pick out the chicken bits, save the dark meat for the soup and the white meat for the pot pie (or whatever you want to do with it) and throw away the dead veggies.
Chill broth in the fridge so that you can skim off the fat the next day. The broth will be very gross-looking, like a gel.

I make soup with the broth and some of the meat and a delicious pot pie with the white meat (see Aunt Terri's Pot Pie recipe).
