2 Pillsbury pie crusts
white meat chicken from boiled whole chicken (another story...- or you could use any chicken pieces)
frozen mixed veggies (preferably organic)
1 can cream of chicken soup
1/2 can milk
a bit of butter
1 medium onion, chopped
Some salt, pepper, garlic salt, or whatever seasonings you like (I use some tarragon)

Preheat oven to 375
Saute onion in a bit of butter
When onions are translucent, add the soup, milk, veggies, and chicken - heat thoroughly. Add some salt, pepper, garlic powder, whatever seasonings you want.
Put 1 pie crust into a deep dish pie pan; pour all the stuff into it.
Put the second pie crust on top; cut some steam slits into the top.
Heat in oven for - maybe 30 minutes. Make sure crust doesn't get too dark.

And then you just eat it!

You can freeze left over pieces in foil, and heat them in the oven, just on the foil, for a great easy meal.

Add a great big green salad for balance.
