1 1/2 cups warm water
1 T honey
1/2 T salt
1 1/2 T yeast
4 cups flour

Directions:
Directions:
Preheat oven to 450 degrees.
Combine water, salt, honey, yeast. Stir to combine ingredients and set them for 5-10 minutes, until yeast starts to bubble.

Add flour 1 cup at a time and mix until absorbed. Knead quickly and work quickly to roll into 2-3 long rolls. Place on greased pan. Let rise 20 minutes. Make slashes and spray with water. Bake on middle shelf for 20 minutes. Cool.

At the outset of being quarantined there was a need to take control of what I could, find ways to be creative, and challenge myself to learn something new. So I began a regimen of walking (10,000 steps a day as prescribed by Dr.Woo), renewing an old habit from my Berkeley days of baking bread - how my kids laughed at those old recipes!

At first yeast was hard to come by, but I persisted. And finally, given that three of my kids had become vegan, my Covid cooking has been heavily vegan.
